1 pound extra lean ground beef5 cloves of garlic, chopped fine1 C onion, chopped1 green pepper, chopped1 large jalapeno, chopped fine (remove seeds)1 cup corn (fresh or frozen)1 cup regular beer1-28 oz. can of petite diced tomatoes8T chili powderSalt and pepper to taste
Chop all vegetables. In dutch oven, begin to brown beef. Add garlic, onion, peppers. Cook over medium heat until starting to soften but not brown. Add salt & pepper and chili powder; cook until spices bloom, 2-3 minutes. Deglaze the pan with the beer, scraping browned bits off bottom of pan. Add tomotoes and corn. Simmer 30 minutes. Taste and adjust seasonings.
