Southwest Salsa Tofu Rice

Ingredients
1 can PC Blue Menu Corn (do not drain)2 servings or half a block of extra firm tofu (cubed)1 medium onion (chopped)1 sweet red bell pepper (chopped) (can be yellow or orange)1/2 PC Chunky Salsa6 cloves of garlic (chopped)3 cups of prepared rice (we like jasmine or brown)1 tbsp ground cumin1 tbsp ground oregano1 tsp black pepper1/2 tsp chili powder2 tsp Grapeseed oil
Directions
Heat the grapeseed oil then add the tofu, onions and garlic. Brown for approx 5 mins. Add the full contents of the can of corn and the peppers. Brown for approx 5 more minutes. Add the rest of the ingredients and remove from heat and cover.
