PX Stuffed Baked Potato

1 medium baking potato10 oz frozen chopped spinach.5 c broccoli, chopped1 tbsp green onions, finely chopped1.5 oz low-fat cheddar cheesedash salt dash pepperdash garlic powder
1. Bake potato at 425 degrees for 45 to 60 minutes, or microwave for about 8 minutes and then let stand for 3 to 5 minutes.
2. When the potato is done, scoop its insides into a small bowl, reserving skin.
3. Add spinach, broccoli, green onions, cheese, and seasonings. Mash.
4. Fill the potato skin with the mixture and bake in oven 10 minutes longer to blend flavors.
