Turkey Chop Suey Over Steamed Brown Rice

1 package (20 oz) fresh/raw vegetable chop suey (mix of snow peas, bok choy, broccoli, napa cabbage, carrots, bean sprouts)4 cups steamed brown rice (can use asian style noodles instead)2 pounds ground turkey (7% fat)Light Asian sesame salad dressing (4T)Soy Sauce (3T)
Cook 2c brown rice in a rice cooker with 5c water.
Meanwhile, spray non-stick skillet with cooking spray and add ground turkey.
Brown over high heat and drain off fat and liquid.
Put turkey back into the pan and add vegetables, cook on high for 5 minutes.
Turn heat off.
Add dressing and soy sauce to turkey and vegetables, season with pepper and a little salt if needed.
Serve turkey and veggies over 1/2 cup brown rice.
Serving Size: Makes 8 to 10 large portions
