Gluten Free Oat Bran Pancakes

Ingredients
1/4 cup oat bran (not oatmeal or steel cut oats)4 oz greek vanilla yogurt1 extra large egg1g baking soda (1g = pinch)1g baking powder (1g = pinch)2 tbsp. maple syrupButter flavored Pam spray
Directions
You can make as 2 small or 1 large pancake.
In a medium bowl, beat oat bran, yogurt, egg, pinch each of baking soda & baking powder and vanilla. Put a small (10") non-stick pan on medium heat and spray pan with butter flavored Pam. Pour in batter and cook on medium heat for 2-3 minutes until bubbles form on top and it is light brown on the bottom. Turn pancake over with a large spatula and cook for 2 minutes on the other side until firm. Top pancake with maple syrup, if desired.
