Pinwheel Meatloaf

One 6 oz. package Farmhouse® Broccoli au Gratin Rice 1-1/2 lbs. lean ground beef 3/4 cup dry bread crumbs 2 eggs beaten 1/3 cup water 1/4 cup onion, minced 2 cloves garlic, minced Salt and pepper to taste 1/4 lb. thinly sliced ham
1.Preheat oven to 350° F. Prepare rice according to package directions. Set aside.
2.In large bowl, combine beef, bread crumbs, eggs, water, onion, garlic, salt and pepper; combine well.
3.Spread meatloaf mixture onto aluminum foil, making a 10" x 8" rectangle.
4.Lay ham slices over meat mixture leaving a 1-inch rim along edges. Top ham with cooked rice mixture.
5.Roll up meat and rice mixture jellyroll style from long end. Seal edges and patch any gaps.
6.Transfer to baking sheet and bake at 350° F for 45-50 minutes.
7.Let stand 10 minutes before slicing.
Serving Size: Mabkes about six 1 & 1/2 cup servings
