Italian Sausage and Rice Dinner

One 6 oz. package Farmhouse® Chicken Rice 1 lb. bulk Italian sausage, casings removed 1 cup onion, chopped 1 clove garlic, minced 1 cup water One 16 oz. can peeled whole tomatoes, broken-up 1 teaspoon basil leaves 2 cups broccoli florets 1 cup grated mozzarella cheese 2 Tablespoons chopped parsley
1.In a large skillet, brown sausage, onion and garlic; drain off fat.
2.Add water, tomatoes and basil; bring to a boil.
3.Add rice and contents of seasoning packet. Reduce heat; cover and simmer 15 minutes.
4.Add broccoli and cook 5-10 minutes longer or until liquid is absorbed.
5.Remove from heat. Sprinkle with mozzarella cheese and parsley. Cover and let stand 5 minutes, or until cheese melts.
Serving Size: Makes about five 1 & 1/2 cup servings
