Chicken Curry Rice Salad

Ingredients
One 6 oz. package Farmhouse® Chicken Rice 3/4 cup mayonnaise 1-1/2 Tablespoons lemon juice 1-1/2 teaspoons curry powder 1/2 teaspoon salt 1/4 teaspoon pepper 2 cups chicken breasts, cooked and coarsely chopped 1/2 cup scallions, chopped 1/2 cup red bell pepper, chopped 1/2 cup golden raisins (optional) 1/2 cup peanuts, chopped (optional)
Directions
1.Prepare rice according to package directions. Cool.
2.In small bowl, combine mayonnaise, lemon juice, curry powder, salt and pepper.
3.Combine rice, chicken, scallions and red bell pepper. Add optional raisins and/or peanuts.
4.Add mayonnaise mixture and combine.
