Fried Tofu

Ingredients
1 container of regular or soft tofu2-3 cups of oil, enough to get 1 inch of oil in a panpaper towels and newspapers
Directions
Cut the tofu lengthwize, then cut into three equal pieces widthwize. Then, remove from tray and cut each piece in half vertically. For each of these pieces, cut diagonally into two triangles.

Lay out a half inch of newspaper, and put paper towels on top. Put the tofu onto this, allowing the water to drain out for 15 minutes. Then flip each piece over to drain the other side.

Heat the oil. It's hot enough when a small bit of tofu sizzles when it's put into the oil. Add the tofu triangles with chop sticks or a fork. Don't overcrowd it. Just one layer is enough. Let it fry and develop a bit of golden crust before flipping each piece. Allow to fry completely, then move each piece to a plate. Don't drain it, as doing so will bring out the water inside each piece.

Eat immediately. You can use a sweet sauce as a dipping sauce, or just eat it plain.
