Squash and Basil Salad

Ingredients
1 Medium sized yellow squash (or zucchini)2 Tbsp Fresh Basil3 Tbsp grated Parmesan cheese1-2 cloves garlicDressing:1/4 cup red wine vinegar1/4 cup olive oil1/2 tsp salt1/4 tsp pepper2 tsp sugar
Directions
Using a mandoline, julienne the squash into small strips. Mix the squash, basil, cheese, and garlic in a bowl.

Combine dressing ingredients in separate bowl. Pour over salad (pour enough to taste - there will be some dressing leftover) and mix well. Chill for one hour.
