Apricot-Glazed Chicken

Ingredients
1 c. Smuckers sugar-free apricot preserves1/3 c. orange juice1/4 c. butter4-5 oz. boneless, skinless chicken breasts1/4 tsp. black pepper
Directions
1. Preheat the oven to 350 degrees.
2. To make the glaze, combine the preserves, juice, and butter. Rub the chicken breasts with the marinade. Sprinkle pepper on top.
3. Place chicken in a roasting pan. Cook for 20 minutes, basting the chicken every 5 minutes with the excess glaze.

    I have Jillian's book with this recipe and it says "smart Start" where you have butter. Smart Start is a cereal, so I'm guessing it was supposed to read as "Smart Balance" and that's what I used. It was kind of blah. I might make it again..Tasted better the next day! - 1/17/10
