Mediterranean Cucumber Salad

Ingredients
3 large cucumbers1 tbsp chopped garlic1 bunch scallions1 1/2 cups lowfat plain yogurtsalt and pepper to taste2 tbsp dried mint 2 tbsp cumin (or to taste)Red pepper flakes (to taste)1 to 2 tbsp lemon or lime juice (to taste)3 tbsp seasoned rice vinegar (light version)
Directions
Slice cucumbers in half. Seed them by using a tablespoon to scrape out the seeds. Chop into bite size pieces and place in large bowl.

Chop bunch of scallions. Yields about one cup. Add to cucumbers.

Add to the mixture: 1 1/2 cups of lowfat plain yogurt, the cumin, the salt,pepper, pepper flakes, mint. lemon juice, garlic and rice vinegar.

Stir until well mixed. You may let it sit overnight to let the flavors set or eat right away.

Makes 6 servings--1 cup each serving.

    I only had one cucumber on hand, so I cut the recipe to 1/3 of all the ingredients. The salad turned out wonderful and I had two servings out of it! - 2/7/08
