Turkey Enchilada Casserole

Ingredients
3 cups chopped turkey breast2 cups shredded part skim mozzarella2 cans prepared enchilada sauce1 serving baked tortilla chips, crushed2 cups cooked black beans4 whole wheat flour tortillas
Directions
Preheat oven to 350* F. Spray a 13 X 9 inch pan with non-stick spray. Cover bottom of pan with a thin layer of enchilada sauce. Place 1 1/2 tortillas on bottom of pan.

Layer 1: Pour sauce onto tortilla, add 1/2 the beans & 1/2 the turkey meat. Sprinkle with a layer of cheese.

Layer 2: Add another 1 1/2 flour tortillas, then add remaining sauce, beans and cheese.

Sprinkle crushed tortilla chips on top and bake for 1 hour or until bubbly!

Makes 15, 2.5 x 3 inch square, servings.
