Shrimp and Beet Green Quiche

1 ready-bake pie crust (Pilsbury)1 Tbs olive oil1 cup sliced onions4 cups (about one large bunch) of beet greens, sliced into thin strips3 eggsAbout 1 cup milk1/2 cup Parmesan cheese, shredded20 shrimp cooked, deveinedsalt and pepper
Preheat oven to 375 degrees.
Press crust in pie plate. Sautée onions in olive oil until beginning to turn golden, add beet greens and cook until wilted. Set aside to cool.
Crack and whisk eggs into 2-cup measuring cup, add enough milk to reach 1 1/2-cup mark, whisk, add salt and pepper to taste.
Sprinkle half of Parmesan into bottom of pie crust.
Mix onion and greens with shrimp. Place into crust.
Pour custard mixture over everything and sprinkle on remaining Parmesan.
Bake for 35-45 minutes until custard is set.
