Chocolate Angelfood Cake from scratch

1 1/2 cups egg whites (room temp)1/4 cup of Water1/4 tsp salt1 tsp vanilla1 1/2 tsp cream of tartar2 cups Sugar (as directed)1 1/4 cup cake flour1/4 cup unsweetened cocoa powder
Beat together egg whites, water, salt and vanilla until foamy. Add cream of tartar and beat until mixture stands in stiff peaks. Add 1 cup of sugar 1/4 of a cup at a time, and beat . Carefully fold in the flour sifted with a cup of sugar, 1/4 at a time. Bake in an angel food cake pan, at 350 for for minutes or until done, then turn upsidedown to cool. Cut around edges and center of pan to remove.
