Gluten-Free Banana Bread "Cupcakes"

Ingredients
4 T. butter, melted1/2 cup egg substitute (or 2 large eggs, or 4 egg whites)1-3/4 cups Pamela's Baking Mix (gluten-free mix)1/2 t. salt1/2 cup sugar or honey1 cup bananas, mashed1 t. vanilla extract
Directions
Preheat oven to 350 degrees. Beat together butter, sugar (or honey), egg and bananas. Add remaining ingredients and mix together. Pour into greased cupcake pan. Bake for 20 min. or when inserted toothpick comes out clean.
