Curried Pumpkin Soup

Ingredients
* Pumpkin, cooked, 4 cup, mashed * Water, tap, 2 cup (8 fl oz) * Milk, 1%, .5 cup * Shallots, 3 tbsp chopped * Garlic, 2 cloves * Curry powder, 1 tbsp * Pepper, red or cayenne, .5 tsp * Brown Sugar, 2 tsp packed * Ginger, ground, 1 tsp
Directions
Saute shallots, garlic in large dutch oven coated with cooking spray--add 1/4 c of the water when it starts to steam.

Add all ingredients except pumpkin, stir and simmer 10-20 min. Add pumpkin puree and stir up well, then simmer for 20 min.
