Hearty Stuffed Zucchini

Ingredients
4 medium sized zucchinis1 8oz can of diced tomatoes, drained1 10 oz package of spinach thawed and drained3 cups of cubed white bread1 egg1.5 cups of chopped mushroomsparsleyThyme1 lb ground beefShredded swiss cheese optional
Directions
Steam zucchini over boiling water. In meanwhile mix together in a large bowl, tomatoes, egg, spinach bread, ground beef and mushrooms. Add parsley and thyme. When zucchini is done, scoop out seeds and meaty portion and put into the meat mixture. Stir together mixture and stuff into shells of zucchini. Top with shredded Swiss cheese. Bake for 30-35 minutes at 350 degrees.
