Rici E Bici (Americanized version)

Ingredients
2 cups long grain white rice2 tbsp light margarine 1/2 small onion, minced1 tsp Better than Bouillon beef stock 4 cups water1 package frozen green peas1 cup Italian blend finely shredded cheese
Directions
In a large saucepan melt the margarine on medium-high heat

Once margarine is mostly melted add onions and saute until onions are translucent

Add rice to saucepan and saute for 2-3 minutes stirring constantly

Add water and Better than Bouillon, bring to a boil and then cover and turn down to low

after approximately 10 minutes add the frozen peas, cook until rice is tender and water is gone

add cheese and stir until well blended and melty

serve!
