Summer Salmon Pasta (BBC Good Food Recipe)

350g penne pasta2 salmon steaks, about 175g each1tbsp olive oil2 tbsp pine nuts1 red pepper, deseeded and chopped300g mushrooms, slicedhandful basil leaves
1. Cook pasta following pack instructions, adding salmon to water 6 minutes before end.
2. Heat oil, cook pine nuts until toasted, add pepper and fry until soft. Add mushrooms, stir until soft, then add a ladleful of pasta water.
3. Remove salmon to a plate and drain pasta. Fork salmon into flakes and add to the vegetables with pasta and basil leaves. Season and toss together before serving.
