Fish Tacos

Ingredients
2 tbsp olive oil1 whole onion thinly sliced1 whole red bell pepper thinly sliced1 whole jalaoeno or banana pepper thinly sliced4 catfish, preferably Basa2 tbsp chili powder1/2 tsp cuminsalt and pepper to taste2 cloves garlis minced1 cup Monterey Jack cheese, shredded12 single 6" tortillas
Directions
Cut fish into 1" cubes. Saute vegetables over med hi heat in 1 tbsp oil for 4 minutes, then remove from pan.
Add other 1 tbsp oil and saute fish about 2 mins. Add spices and cook 1-2 minutes more.
Add vegetables back to pan with fish.
Serve in tortillas with your favorite toppings, lettuce, tomato, cilantro, etc and cheese.
