Rumbamel's Creamed Fresh Corn

Ingredients
-1 oz 1/3 less fat cream cheese-1 T Smart Balance Omega Light Buttery Spread-1 T granulated sugar-3 1/2 C cooked and shucked fresh corn-1 T skim (fat free) milk
Directions
--Take your cooked corn and cut off a light layer of the kernels, then turn your knife around and shuck out the rest of the kernels from the ears. Do this until you get 3 1/2 C.

--Melt your cream cheese and butter in a medium pot over low heat stirring constantly. Stir in your sugar and heat until dissolved. Stir in the corn and milk. Heat until warm or about 5 min., stirring occasionally.

--Makes 7 servings of 1/2 C each.
