Curried Chicken and Broccoli Casserole

4 C chopped Broccoli1/4 C Water1 can (10.75 oz) Healthy request cream of mushroom soup1/4 C light mayo1 Tbsp lemon juice1 Tbsp curry powder1/2 tsp salt1/2 tsp pepper2 boneless, skinless chicken breasts - cut into bite size chunks1/2 C shredded reduced fat colby or swiss cheese
Preheat oven to 350. Coat 13 x 9 baking dish with cooking spray.
Place broccoli in water in large resealable plastic storage bag. Microwave on high power, rotating occasionally, for 3-5 minutes, or until bright green. Drain and set aside.
In small bowl, mix soup, mayo, lemon juice, curry powder, salt and pepper. Stir to mix.
Line prepared baking dish with reserved broccoli. top with the chicken. Cover evenly with the soup mixture. Sprinkle with cheese. Cover and bake for 25 mins. Uncover and bake for additional 15-20 mins, or until golden and bubbly.
