Ingredients
1 carrot1 medium onion1 poblano pepper1 red bell pepper3 portabella mushroom caps (6 oz or 1 package)3 cloves garlic1/2 cup tomato saucecooking spray
Directions
Chop all vegetables as desired and put into skillet with a little cooking spray. Cook on medium low heat with a lid. Add tomato sauce when almost done cooking. Add salt, pepper, and spices as desired. Enjoy!
