Linda's Deer Meat Chili

3lbs deer meat1 TBSP extra virgin olive oil1 large onion, chopped1/2 large red or green pepper,chopped4 cloves garlic, chopped3-4 stalks celery, chopped2 28oz cans diced tomatoes1 19 oz can red kidney beans1 5-6 oz can tomato paste1 10oz can mushrooms1/2 TBSP chili powder (more if you like it spicier)salt & pepper to taste (easy on the salt)
Heat olive oil in pan and fry onion, red pepper, garlic, celery until semi soft.
Add deer meat and continue frying until no pink left in meat.
Add mushrooms, tomatoes, paste and chili powder.
Let simmer for about 1 hour and then taste. Add salt & pepper if necessary.
Continue simmering for about another hour.
Serving Size: Makes 12 2 cup servings
