Chicken sausage and cheese tortellini soup

1 tbsp olive oil3 medium onions, chopped3 tbsp minced garlic2 tbsp italian seasoning1 tbsp black pepper24 oz bistro sensations chicken sausage (I used 4 links of habenero and 4 links of roasted peppers sausage), cut into bite size pieces2 bottles of V8 vegetable juice8 cups 99% fat free chicken broth16 oz fresh baby spinach40 oz Buitoni 3 cheese tortellini
Saute onions and garlic in olive oil. When onions are tender, add italian seasoning, pepper, and chicken sausage. Cook until heated through. Add V8 and chicken broth. Bring to a boil. Add spinach, cook for 10 minutes. Add tortellini and cook for an additional 8 minutes.
I make a bunch and freeze half of it for later. You can easily cut the recipe in half.
