Easy Down-home slow cooker greens

Ingredients
2 large stalks collard greens1 jalapeno pepper1 cup chicken, turkey or vegetable broth1 tbl olive oil (Optional)
Directions
Chop or tear collards into bite size pieces. Chop jalapeno pepper into very small pieces, including the seeds. Combine vegetables into a 2 quart slow cooker. (This amount of greens should almost pop the top of the slow-cooker lid, but don't worry, they will reduce). Pour broth over vegetables and simmer over night on low.

Please allow up to 10 hours, in the slow cooker on a low setting.
Makes six 1/2 -cup servings.

    I fit 2 bunches of greens into my crock pot by blanching them, and then using half the water in the crock. Also, I used up the bacon slices in my fridge and a large onion as well as garlic. Yummy. Especially if use beet greens, can finish pot liquor with a dash of cider or balsalmic vinegar. - 12/27/08
