Stir Fry

Ingredients
1 tbsp olive oil1-2 cooked chicken breasts, chopped (leftovers work great)1 lb. carrots, peeled and cut into 2 inch slices1 lb. broccoli florets, chopped1 onion, choppedSauce:1 tbsp low sodium soy sauce1 tbsp hoisin sauce1 clove garlic, finely grated1 tsp ginger root, finely grated1/2 tsp spicy brown mustard2 tbsp water
Directions
Add olive oil, carrots, broccoli, and onion to a wok. Stir fry over medium heat for 10 minutes, or until veggies are crisp-tender.

While veggies are cooking, mix sauce in a small bowl.

Add chicken, stir fry until heated through. Mix in sauce, serve over rice or egg noodles.
