French-Style London Broil

1 or 2 flank steaks (preferably from pasture fed beef)1/2 cup olive oil1/2 cup burgundy wine2 Tbsp. onion, minced1 clove garlic, minced1 1/2 tsp. salt5 drops of Tabasco sauce
Score both sides of th esteaks in a diamond pattern about 1/2 inch deep. Combine all of the ingredients in a large shallow baking dish. Coat the steaks with the marinade and turn them four times during a 2 hour period of marinating in the refrigerator. (You may also marinate over night.) Remove the steaks from the marinade and broil for 3-5 minutes on each side. To serve, cut diagonally into thin slices.
