Introduction

Ingredients

3 6oz pieces of rump or round steak
1 glass red wine
1tbsp brandy or cognac
2tsp green peppercorns in brine
1 tsp dijon mustard
1 cup of beef stock (or stock cube)
4 tbsp reduced fat sour cream or hal and half
Directions
Place the peppercorns in a small pan with the wine, bring to the boil and boil for 3 minutes. Add the dijon mustard and stock. Simmer for 5 minutes.
Meanwhile heat a skillet to very hot and add the olive oil. Fry the steak to your preference. 1.5 min per side for rare, 2.5 min per side for medium and 4 min per side for well done.
Add the brandy and allow to flambe (ignite) immediately pour the wine sauce over the steaks. Remove the steaks and keep warm.
simmer the sauce for one minute and add the cream. Heat and serve.
Delicious served with green veg/salad and home made oven chips.

This was very good, I used lean sirloin and served it on a bed of spinach with broccoli and a sweet potato. The sauce did not reduce as much as I expected it to but it was still very tasty! And my boyfriend loved it! I did not have and could not find green peppercorns so I just used black. - 1/15/10
