Scallop and Grapefruit salad

Ingredients
2 pink grapefryit4 tablespoons olive oil1 tablespoon liquid honey1 tabllespoon finely sliced pink pickled ginger1 teaspoon finely spiced red chilli or crushed froma jar18 large succulent scallops1 large lemon, juice and zestRocket or watercress or Lettuce
Directions
Peel grapefruit with sharp knife removing the pith and sepearte into segmenst catching the juice
Make dressing by combinging 2tablesppons olive oil with honey,ginger, chilli and shaved grapefruit.
Toss scallops in remaining oil.when ready to serve,sear scallops in hot pan for 1 to 2 minutes until puffed and opaque
Arrange roockket or cress on plate and drizzle with pan huice also if required

Serving Size: Makes 2 serves as a main or 4 as an entre
