* 2-3 lbs of boneless skinless chicken breast * 1 pound smoked link sausage * 6 eggs * 1 cup chopped onion * 2 teaspoons Seasoned Salt * 1 teaspoon garlic powder * 1 teaspoon ground red pepper * 1 teaspoon ground black pepper * 3 bay leaves * 8 cups water * 1 stick of butter * 3 cups raw white rice
Slice the sausage into 1/2-inch pieces. In a stockpot, combine the chicken, sausage, onion, seasonings and bay leaves. Add the water, add the eggs, bring to a boil, cover, and cook at a low boil for 20 minutes. Remove the eggs from the pot, cool, crack,slice, and set aside. Boil pot for 20 more minutes then remove chicken from the pot and let cool slightly. Once chicken is cool pull apart, seperate, and put to side. Add the butter and rice to the pot and bring to a boil, stirring well. Boil for 10 minutes, then reduce the heat, cover the pot, and simmer for 10 minutes, or until the rice is done. Remove the bay leaves, and return the chicken and chopped eggs to the pot. Mix, season to taste, serve, and enjoy!
