HOMEMADE: Simone's Stir fry from 7/18/2011

Ingredients
Chicken 5- 6 ozOnion- 1/2 largeolive oil- 1 tbsred peppers- 1 smallyellow peppers- 1 smallgreen peppers- 3/4 smalltomato- 1 largebok choy- several leavescelery- 1 large stalkbirds eye oriental stir fry mix- 2 servingsMushrooms- 2 cups of chopped up fresh mushrooms1 serving honey bbq sauce1 serving of Terriaki sauce.chilli powder to tastesalt seasoning to taste
Directions
1. Chop all vegetables into strips, and keep together
2. Chop onions and chicken on a separate plate
3. heat olive oil in wok
4. add onions, chilli powder , seasoning and chicken, stir fry for two minutes
5. Add vegetables, in two batches, stir fry for five minutes
6. add the two sauces, stir fry for another 2 minutes
7. cook brown rice
8. divide stir fry into four even serving bowls, then add 1/2 cup brown rice (cooked)

Serving Size: makes 4 even servings (0.5 cups of brown rice included
