Quinoa Dragon Bowl

Ingredients
3/4 c of Quinoa1 Large onion, sliced2 c Swiss or Rainbow Chard, stems removed *2 small beets, grated1 large Carrot, grated1/4 c Naam Miso Gravy3/4 c of cheddarolive oil for pan* Can substitute spinach, young collards, or any wilting greens.
Directions
Heat olive oil in frying pan. Slice onions into 1/4" rounds and caramelize over medium low heat.

In separate sauce pan, boil 1.5 C of water with quinoa. Take off heat once water has evaporated.

Shred beets, carrots and cheddar. Set aside.

Shred chard leaves. Immediately prior to serving, put chard in frying pan with onions until wilted.

Plate quinoa, then chard-onion mix, then grated vege, add sauce, then top with cheese.
