Creole Chicken and Okra Gumbo

Ingredients
2 T olive oil2 T all-purpose flour1 small onion, chopped3 cloves garlic, minced1 10oz pkg. sliced frozen okra1 14 1/2 oz can diced tomatoes2 cups low-salt broth1/2 pound chicken tenderloins or boneless thighs, cut into 1-inch pieces1 t ground thyme1 t hot pepper saucesalt and pepper to taste
Directions
Stir vegetable oil and flour in large saucepan over high heat until smooth and dark brown, about 3 minutes. Add onion, garlic, okra, tomatoes with the juice, and broth; simmer 3 more minutes. Sprinkle chicken with thyme, garlic salt and fresh cracked pepper. Add to saucepan. Simmer uncovered until chicken is cooked through, about 10 more minutes. Season to taste with hot pepper sauce and serve over brown rice, if desired.
