Ginger Wheat

2.5 C water or milk1/4 C Oat bran [can use wheat germ instead]1/4 C Wheat bran1/4 C Cream of Wheat [COW]2 t gound Cinnamon 2 large chunks chopped crystalized ginger1/2 t vanilla extract or to taste
Combine oats, wheat and COW in a small bowl and set aside. In a medium saucepan, add water, vanilla and cinnamon and put on medium high heat. Immediately chop ginger finely and add to water. Allow to come to a boil [almost boil if using milk]. Add wheat mixture to boiling water stirring constantly. Once boiling you can continue stirring but it is not necessary. Allow to cook for at least two minutes to desired thickness. It will thicken upon cooling.
Cooking hint: As many burners heat differently, watch for spillage. If the mixture starts to rise, the heat is too high. Remove from heat immediately, allow the mixture to fall, reduce burner heat to medium then continue cooking.
Serves 2-4. Diabetic and hypoglycemic friendly.
