Kelly Rennie's Fruit and Nut Biscuits (Grain Free)

1/2 cup coconut oil or butter, softened1/4 cup ground almonds or sifted coconut flour1/2 cup peanut butter1/2 cup honey1/4 tsp salt (optional)1/2 cup flaked coconut1/2 cup mixed nuts or seeds1/2 cup raisins or dried fruit
Note: Calories are calculated using coconut oil, ground almonds, 1/2 cup chopped pecans and raisins. When I made them, I used an ice cream scoop to measure portions onto the tray. They turned into very flat cookies while baking instead of biscuits. I will try pressing them into balls next time. Coconut flour may help, too.
Mix peanut butter, honey, coconut oil and salt together.
Stir in ground almonds/coconut flour and mix thoroughly. With your hands, work in flaked coconut, nuts, and raisins.
Roll mixture into balls, place on a greased tray.
Bake at 350 for 10-15 minutes or until golden brown. When hot, cookies are soft and crumbly, so allow to cool for a few minutes before removing from tray.
