Vegan pumpkin cookies

Ingredients
2 cup brown sugar, firmly packed 2 teaspoon vanilla 2 cup canned pumpkin 2 teaspoon baking soda 1 cup unsweetened applesauce 2 teaspoon baking powder 1 teaspoon cinnamon 1 tsp nutmeg 1/2 teaspoon ginger 4 cup all-purpose flour
Directions
Beat sugar, pumpkin, applesauce and vanilla.

Sift together dry ingredients. Stir into the pumpkin mixture until smooth.

Drop by spoonfuls or oiled baking sheet, and bake at 350°F for 15-18 minutes.
