Good for You Honey Banana Flax Muffins

Ingredients
1/2 cup ground flaxseed1/2 cup whole wheat flour1/2 cup wheat germ1 tablespoon baking powder1 teaspoon baking soda1/2 teaspoon salt4 very ripe medium sized bananas, mashed well1/2 cup juice sweetened cinnamon apple sauce1/4 cup slightly warm honey2 tablespoons unsalted butter or margarine, melted1 egg (leave out for vegan muffins)
Directions
1. Preheat oven to 350 degrees. Spray a muffin pan with cooking spray.

2. In one large bowl mix together dry ingredients, in another mix together wet ingredients.

1. Mix dry ingredients into wet ingredients. With an ice-cream scoop, scoop and scrap off excess batter and release into each muffin cup. You may need a second muffin tin for 2 or 3 extra muffins.

2. Bake for about 20 minutes, or until done.

Makes 12 to 15 depending on banana size.
