1/2 pound soft tofu1/2 pound firm tofu1 24-ounce can sweet potatoes, packed in syrup2 teaspoons ground cinnamon1 teaspoon ground ginger1/2 teaspoon grated nutmeg1 teaspoon salt2 teaspoons vanilla extract1/2 cup sugar1 9-inch unbaked pie shell
Preheat the oven to 350 degrees.
Blend the ingredients for the filling in a blender or food processor until free of lumps. Pour into the pie shell and bake for 1.5 hours, or until a knife inserted in the center comes out clean.
This recipe can be made vegan by making your own crust with vegetable shortening.
