HG Yumbo Gumbo With Sausage

14.5 oz can stewed tomatoes not drained8 oz peeled and deveined raw med shirimp with tails removedSmoked Turkey Sausage, sliced1 cup spicy v81 cup frozen cut okra1/2 cup chopped green bell pepper1/2 cup chopped red bell pepper1/2 cup chopped onion1 tbl cornstarch1 tsp pepper sauce or to taste2 tsp Cajun seasoningblack pepper to taste3/4 cup water
1) Bring a large pot sprayed with nonstick spray to med heat. Add sliced sausage, peppers and onion, stirring occasionally, cook for about 3 min, util tender and sausage heated thru.
2) Add tomatoes, V8 and cornstarch stirring well to disolve cornstarch. Cook until begins to bubble. Add okra, cajun seasoning, and pepper sauce. Stir and bring to boil.
3) Reduce heat to low and simmer 10 min.
4) Add Shrimp and continue to simmer until shrimp are cooked through, about 3-4 minutes. Add crab meat and 3/4 cup of water. Raise heat to medium and return to a boil.
5) Remove from heat, cover and let thicken for 5 minutes. Season to taste with black pepper, extra cajun seasoning or pepper sauce.
