Blueberry Crisp

1 cup fresh blueberries2 teaspoons granulated sugar1/4 cup quick oats1 tablespoon flour1 tablespoon flax seed meal2 teaspoons unsalted butter2 teaspoons brown sugar
1. Preheat oven to 400 degrees. Spray 2 6-ounce ramekins with nonstick spray.
2. Place berries in a medium mixing bowl. Sprinkle with a combination of granulated sugar and 1 teaspoon flour. Set aside.
3. Melt the butter in a small mixing bowl. Add the rest of the flour, brown sugar, and oats and mix together with a fork. The mixture will be crumbly.
4. Divide the berries among the ramekins. Top with the oat topping.
5. Bake at 400 degrees for 30 minutes or until hot and bubbly.
Serving Size: Makes 2 6-ounce ramekins
