Watermelon Tomato gaspacho

Ingredients
6 cups chopped seedles watermelon (divided)3 cups choppe tomato (divided)1 shallit or amall onion chopped2 Tbsp olive oil2 Tbsp sherry vinegar (or balsamic).25 cup chopped fersh cilantro (divided)1 tsp salt.25 tsp blk pepper.
Directions
put 5.5 cup watermelon,2.5 cups tomato,shallot
oil, vinegar , 2 tbsp of the cilantro,salt and pepper into blender and puree until smooth.
Transfer puree to fine mesh strainer set over large bowl
and strain puree,pressing as much as possible through,discard solids (or not,can be used in salsa)
Cover and chill for at least one hour.

Serving Size: makes 4 servings at 15 oz.
