Spinach Salad with Shrimp

Ingredients
1/4 c. bacon grease1/4 c. Hellman's lite mayo1/4 c. vinager1/4 c. sugar5 c. fresh baby spinach5 T. sliced almonds10 fresh mushrooms, sliced1 lb. shrimp, cooked (grilled, broiled or boiled)5 pieces of cooked bacon
Directions
Preparing plates:
Arrange the following on each plate-
1 c. spinach
1 T. sliced almonds
2 sliced mushrooms
1 piece of bacon, crumbled

Dressing:
Mix first 4 ingredients in a small sauce pan. Cook on medium heat, stirring constantly, until clear. Take off heat.

Shrimp:
Cook shrimp as desired.

Add 3 oz of shrimp to each plate and drizzle with 3 T. of warm dressing. Serve.
