3 boneless skinless chicken breast1 large onion1 10 oz package sliced mushrooms1 can zucchini and tomato1 jar Marinara sauce1 cup shredded low fat cheese
Preheat oven to 350 degrees. Slice onion into thin slices, sautee with mushrooms in a frying pan until tender. Cut chicken breast into bite sized cubes. cook in frying pan until all pink is gone. combine all vegetables, chicken and marinara sauce in a casserole dish. Top with shredded cheese. Cook for 20 minutes or until cheese is melted. We serve this with a low carb whole wheat bread as a side.
