Santa Fe Chicken

4 Chicken Breasts, no skin, Canola Oil, 2 tbspOnions, raw, 1 large 2 Jalapeno Peppers (seeded)Garlic, 1 clove Del Monte Diced Tomatoes 1 can (don't drain)Chicken Broth, 10 fl ozBrown Rice, long grain, 1.5 cupPepper, black, 1 tspsalt, 1 tsp Cumin, 2 tsp Cheddar Cheese, 0.5 cup, shredded Cilantro, raw, 1 tbsp
Sautee diced onions and finely diced jalapeno peppers in oil until tender. Add garlic and cook 1 minute longer. Add Chicken Broth, Diced Tomatoes and Brown Rice. Bring to a boil. Sprinkle Chicken with salt, pepper and cumin on each side. Add Chicken to Rice Mixture and simmer covered for15 minutes on each side. Remove from heat and sprinkle with cheddar cheese and let sit for 5 minutes until cheese melts. Garnish with Cilantro (optional)
