Cottage Cheese Coconut Flour Pancake

Ingredients
1/2 cup 1% or FF Cottage Cheese4egg whites1/4cup Almond Breeze unsweetened vanilla1/4 cup oat bran2Tbsp. Coconut Flour1tsp. Pure vanilla extract
Directions
Put all ingredients in a blender (wet ingredients first for easy mixing). Blend until a batter consistency. Heat nonstick skillet over medium heat. Spray with cooking spray. Pour two evenly sized pancakes and cook until bubbles form about 4 min. Flip. Cook another 4 minutes. Makes 6 small pancakes or 3 large. Serve with maple syrup (sugar free) or fruit topping (not included in nutritional count).
