Cashew Chicken Salad

Ingredients
Romaine Lettuce (one bunch)1 frozen chicken breast -- no skin, boneless4 tbsp of sesame oil4 tbsp of Tamari (wheat free) OR regular soy sauce1/4 cup of raw scallions, chopped -- optional, adjust to taste1/2 cup raw grated carrot1/4 cup dry roasted unsalted cashews (halves and pieces) -- optional
Directions
1.) Defrost the chicken in a microwave-safe bowl with some water, for about 5 minutes.
2.) While the chicken is defrosting, wash and prepare all veggies (cut lettuce and scallions, grate carrots).
3.) After chicken has defrosted, cook it on the stove on medium heat, or in the microwave. Add 1 tsp of sesame oil and 1 tsp of soy sauce/tamari sauce.
4). Once chicken is cooked (5-10 minutes), let it cool for a few minutes.
5.) After chicken has cooled, chop into small pieces. Toss into salad, along with cashews. Mix 2 tbsp of Sesame oil and 2 tbsp of soy sauce together, then mix into salad. This will be the dressing.
6.) Enjoy! Makes enough for 2 or 3 people. If you want to make it stretch, add more chicken or cashews.
