Kentucky Hot Brown

4 skinless boneless chicken breasts4 thick slices of white bread4 slices of crisp bacon½ stick butter¼ cup flour2 cups milk heated¼ cups Parmesan cheese2 eggs beaten¼ tbs pepperNutmeg to taste2 tsp lemon juice1 cup shredded cheddar cheese
Toast the bread and butter then place in a 200 degree oven to crisp and keep warm.
Melt butter and stir in flour with a whisk until there are no lumps.
Add hot milk and whisk til smooth.
Whisk constantly while cooking until thickened.
Add parmesan cheese.
Stir ½ cup of the mixture into the eggs then pour back into the sauce and cook a minute longer.
Add pepper nutmeg and lemon juice.
Place toast on a platter and arrange chicken then cover with ½ cup of the sauce and sprinkle each with ½ cup of cheddar cheese then place under the broiler for 1 minute. Top with bacon
