1 small container Cool Whip Free, thawed1 large (32 ounce) container nonfat cottage cheese1 package Sugar Free Jello powder1 #10 can crushed pineapple in juice1 15 ounce can mandarin oranges1/2 c. chopped pecans or walnuts (optional)
Empty cottage cheese into large bowl. Add Jell-o powder and mix well by hand. Drain pineapple and mandarine orange well; add fruit and chopped nuts to cottage cheese mixture and mix well by hand. Add Cool Whip; fold in until completely mixed. Sprinkle a few nuts on top; refrigerate until serving.
